Steps

  1. Line a baking sheet with parchment paper, making sure it covers the surface all the way to the edges.
  2. In a mixing bowl, combine 1 cup of Greek yogurt, 1.5 tablespoons of honey (or maple syrup), and 0.5 teaspoon of vanilla extract.
  3. Stir the mixture thoroughly until it is smooth and well combined.
  4. Pour the yogurt mixture onto the parchment-lined baking sheet.
  5. Spread the yogurt evenly with a spoon. For a thinner bark that melts faster, spread it thin; for a creamier, slower-melting treat, leave a thicker layer.
  6. Customize your bark by adding toppings. Divide the sheet into sections and add different combinations of sliced strawberries, blueberries, raspberries, granola, and crushed nuts.
  7. Optional: Drizzle 2 tablespoons of melted dark chocolate or extra honey over the top for extra flavor.
  8. Place the baking sheet in the freezer for at least 4 hours, or until the yogurt is completely hardened.
  9. Remove the sheet from the freezer and carefully peel the bark off the parchment paper.
  10. Use your hands to break the bark into bite-sized pieces or use a knife to slice it into neat squares.
  11. Store any leftovers in an airtight container or freezer bag for up to 3 months.
