No-Bake Energy Balls

Materials
- rolled oats (1 cup)
- natural peanut butter or nut butter (1/2 cup)
- ground flax seed, chia seeds, or hemp seeds (1/4 cup)
- honey or maple syrup (1/4 cup)
- vanilla extract (1 teaspoon)
- salt (1 pinch)

Steps
- Place 1 cup of rolled oats into a mixing bowl.
- Add 1/2 cup of natural peanut butter, 1/4 cup of ground flax seed, 1/4 cup of honey, 1 teaspoon of vanilla extract, and a pinch of salt to the bowl.
- Use a spatula to mix all the ingredients together thoroughly until they are well combined.
- Test the dough: it should stick together without being too wet or crumbling apart. If it is too wet, add a few more oats. If it is too dry, add a small amount of extra honey.
- Using your hands or a cookie scooper, portion out the mixture and roll it between your palms to create small balls about 1 inch in diameter.
- Place the finished energy balls on a plate or tray.
- Put the plate in the refrigerator for about 1 hour to let the balls firm up.
- Store the energy balls in an airtight container in the fridge for up to a week or in the freezer for up to 2 months.
